Mostly posting this to get the ball rolling here:
Okay, Sheoldred states, "at the beginning of your upkeep, return target creature from your graveyard to the battlefield." Would the creature have summoning sickness? Has it experienced an upkeep?

Yes it would have summoning sickness as it wasn't there since the beginning of your turn, it entering the battlefield happened after the Sheoldred trigger.
302.6: A creature's activated ability with the tap symbol or the untap symbol in its activation cost can't be activated unless the creature has been under its controller's control continuously since his or her most recent turn began. A creature can't attack unless ... etc

Spike has it right:
Summoning sickness applies based on beginning of TURN, not upkeep. Definitely wouldn't work here, for that reason. There's that untap step that comes first.
