This has been a problem at my Friday Night Magic for along time. If I have a creature with lifelink and my opponent attacks with enough damage to kill me, can I save myself by blocking with that creature or would my life total hit 0 and lose before I gain the life?

Lifelink does not use the stack since it is not an activated or triggered ability, so you will gain life simultaneously as you lose it during the combat damage step. This means that the state-based check will look at your life total after you gained the life so you'd live in the situation you proposed.
702.15a: Lifelink is a static ability.
702.15b: Damage dealt by a source with lifelink causes that source's controller, or its owner if it has no controller, to gain that much life (in addition to any other results that damage causes). See rule 119.3.
104.3b: If a player's life total is 0 or less, he or she loses the game the next time a player would receive priority. (This is a state-based action. See rule 704.)

Note that I think that older life gain off damage cards, like {armadillo cloak} do not work that way and you would die...that is one of the reasons they changed how it worked for the "new" keyword of lifelink.

That is absolutely correct. {Spirit Link} and similar cards use the stack and cannot save you in these situations.
